In the global food and beverage industry, ensuring product safety, extending shelf life, and retaining original flavor are the core concerns of every producer. A pasteurization machine is a device that uses pasteurization to sterilize food. The principle of pasteurization is that, within a certain temperature range, through appropriate temperature and holding time treatment, pathogens in food are killed while retaining a small amount of harmless or beneficial bacteria or bacterial spores .
There is a wide variety of pasteurization procedures in use today. The "Low Temperature Long Time" (LTLT) treatment is an intermittent process and is now only used by small dairy factories to produce some cheese products. "High Temperature Short Time" (HTST) treatment is a "flow" process, usually carried out in plate heat exchangers, and is now widely used in the production of drinking milk. The products obtained in this way are not sterile, that is, they still contain microorganisms and need to be refrigerated during storage and handling. "Rapid pasteurization" is mainly applied in the production of yogurt and dairy products. There are mainly two types of pasteurization: high-temperature disinfection methods commonly used internationally
One method is to heat the milk to 62 to 65 degrees Celsius and keep it for 30 minutes. By using this method, various growth-type pathogenic bacteria in milk can be killed, with a sterilization efficiency of 97.3% to 99.9%. After disinfection, only some thermophilic bacteria, heat-resistant bacteria, and spores remain, but most of these bacteria are lactic acid bacteria. Lactic acid bacteria are not only harmless to humans but also beneficial to health.
The second method involves heating the milk to 75 to 90 degrees Celsius and maintaining it for 15 to 16 seconds. This method has a shorter sterilization time and higher work efficiency. However, the fundamental principle of sterilization is that it is sufficient to kill the pathogenic bacteria. If the temperature is too high, there will be more nutrient loss instead.
